A delicious no-bake treat combining peanut butter, oats, and cinnamon, perfect for a quick snack or dessert.

Ingredients

  • 2 teaspoons pure vanilla extract
  • 1 tablespoon ground cinnamon
  • 3/4 cup smooth peanut butter
  • 1/2 cup virgin coconut oil
  • 2 cups quick cook oats
  • 1/2 teaspoon fine sea salt
  • 1/2 cup maple syrup

Instructions 

  • Line an 8x8 inch pan with parchment paper.
  • Combine peanut butter, coconut oil, and maple syrup in a saucepan; heat until melted.
  • Remove from heat and stir in vanilla extract.
  • Mix oats, cinnamon, and salt in a large bowl; add the peanut butter mixture and stir.
  • Press mixture into the prepared pan and refrigerate until firm, about 2 hours.
  • Lift out using parchment, cut into squares, and store in an airtight container.
