  • 3 large potatoes (peeled and diced)
  • 2 large leeks (cleaned and sliced)
  • 4 cups vegetable broth
  • 1 cup heavy cream (for creaminess)
  • 2 tbsp chopped chives (optional)

Instructions 

  • Combine potatoes, leeks, and vegetable broth in a large pot and bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 30 minutes.
  • Puree the soup until smooth using a blender.
  • Stir in heavy cream and season to taste.
  • Serve hot, garnished with chopped chives if desired.

Notes

For a vegan version, substitute heavy cream with coconut milk.
