Ingredients

Figs

  • 7-8 pieces fresh figs
  • 0.75 cup all-purpose flour (for batter)
  • 0.5 cup granulated sugar (for batter)
  • 1 teaspoon ground cinnamon
  • 4 tablespoons butter (melted)
  • 0.5 cup chopped pecans
  • 2 cups all-purpose flour (for cake)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 0.125 teaspoon freshly grated nutmeg
  • 3 large eggs (room temperature)
  • 1 cup granulated sugar (for batter)
  • 1 cup vegetable oil
  • 0.33 cup sour cream (room temperature)
  • 0.25 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon zest

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour the cake pan.
  • Mix dry ingredients and prepare the batter with eggs, sugar, oil, sour cream, lemon juice, vanilla, and lemon zest.
  • Fold in chopped figs and pour batter into the prepared pan.
  • Combine crumb topping ingredients and sprinkle over the batter.
  • Bake for 40 minutes or until a toothpick inserted comes out clean. Cool before serving.

Notes

Use ripe figs for the best flavor and texture.
