Ingredients

Dried ingredients

  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 2/3 cup butter, cubed
  • 1/4 cup water
  • 2 teaspoons instant coffee granules, optional
  • 2-3/4 cups bittersweet chocolate chips, divided
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Combine sugars, butter, water, and coffee granules in a saucepan; boil and stir until smooth. Remove from heat and melt in 1-3/4 cups of chocolate chips. Cool slightly.
  • Whisk eggs until frothy (about 3 minutes), then add vanilla extract. Gradually mix in the warm chocolate mixture, ensuring it isn't too hot.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gently fold dry ingredients into the chocolate-egg mixture. Fold in remaining chocolate chips.
  • Line a light-colored metal pan with parchment paper and spray with cooking spray. Pour batter into the pan.
  • Bake at 325°F (160°C) for 40-50 minutes, checking with a toothpick for gooey crumbs. Cool before cutting into bars.

Notes

Use a light-colored pan to prevent overbaking. For dark pans, reduce oven temperature by 25°F.
