Delight in these rich, fudgy blondies infused with sweet ripe figs and white chocolate for a decadent treat.
Ingredients
Dough

butter, chopped

white chocolate, chopped into small chunks

caster sugar

vanilla extract
(or 10 ml vanilla essence)

eggs, lightly beaten

flour (white bread or cake flour)

ripe figs, sliced into quarters or wedges
Instructions
Preheat oven to 180°C and line a deep baking tin with non-stick paper.
Melt butter and 160 g of white chocolate in a microwave, stirring until smooth.
Mix in sugar, vanilla, and eggs; then fold in sifted flour, baking powder, and salt. Add remaining chocolate and fold.
Pour batter into prepared tin, top with fig wedges, pressing them in slightly.
Bake for 40-45 minutes until edges are golden. Cool, then slice and serve.
Notes
Store in an airtight container and enjoy chilled or at room temperature.
