Delight in these rich, fudgy blondies infused with sweet ripe figs and white chocolate for a decadent treat.

Ingredients

Dough

  • 100 g butter, chopped
  • 240 g white chocolate, chopped into small chunks
  • 180 ml caster sugar
  • 5 ml vanilla extract (or 10 ml vanilla essence)
  • 2 XL eggs eggs, lightly beaten
  • 1.25 cups flour (white bread or cake flour) (about 310 ml or 175 g)
  • 5 ml baking powder
  • 1 ml salt (about 1/4 teaspoon)
  • about 4 medium-large ripe figs, sliced into quarters or wedges

Instructions 

  • Preheat oven to 180°C and line a deep baking tin with non-stick paper.
  • Melt butter and 160 g of white chocolate in a microwave, stirring until smooth.
  • Mix in sugar, vanilla, and eggs; then fold in sifted flour, baking powder, and salt. Add remaining chocolate and fold.
  • Pour batter into prepared tin, top with fig wedges, pressing them in slightly.
  • Bake for 40-45 minutes until edges are golden. Cool, then slice and serve.

Notes

Store in an airtight container and enjoy chilled or at room temperature.
