Delight in these rich, fudgy vegan brownies that are easy to make and perfect for any occasion.

Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour (or whole wheat flour)
  • 1 cup granulated sugar (or coconut sugar)
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet ingredients

  • 1 1/2 cups water
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 teaspoons vanilla extract

Add-ins

  • 1 cup dark chocolate chips (vegan)
  • 1/2 cup chopped walnuts or pecans (optional) (optional)
  • 1/2 cup dried cranberries or raisins (optional) (optional)
  • 1/4 teaspoon instant espresso powder (optional) (optional)
  • Sea salt flakes (optional) (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment and grease.
  • Mix flaxseed meal with water; let sit 5 minutes until gelatinous.
  • Combine dry ingredients; whisk well. Mix wet ingredients; then combine with dry. Fold in chocolate chips and optional add-ins.
  • Pour batter into pan, sprinkle sea salt if desired, and bake 25-30 minutes. Cool completely before slicing.

Notes

For extra fudginess, slightly underbake and let cool in the pan.
