A flavorful baked chicken and potato dish seasoned with garlic, Parmesan, and Italian herbs, perfect for a comforting meal.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Potatoes

  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 0.33 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet.
  • Rub chicken with olive oil and seasonings. Toss potatoes with olive oil, garlic, Parmesan, salt, and pepper.
  • Arrange chicken and potatoes on baking sheet. Roast for 25-30 minutes, flipping potatoes halfway.
  • In last 5 minutes, sprinkle Parmesan over everything. Broil for 2-3 minutes until golden.
  • Garnish with parsley and serve hot.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
