Instructions
Preheat oven to 400°F (200°C). Line a baking sheet.
Rub chicken with olive oil and seasonings. Toss potatoes with olive oil, garlic, Parmesan, salt, and pepper.
Arrange chicken and potatoes on baking sheet. Roast for 25-30 minutes, flipping potatoes halfway.
In last 5 minutes, sprinkle Parmesan over everything. Broil for 2-3 minutes until golden.
Garnish with parsley and serve hot.
Notes
Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
