Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts

Vegetables

  • 1.5 pounds baby Yukon Gold or red potatoes (halved)

Aromatics & Dairy

  • 4 cloves garlic (minced)
  • cup grated Parmesan cheese

Oils & Seasonings

  • Olive oil Olive oil (for coating)
  • Italian seasoning Italian seasoning
  • Smoked paprika Smoked paprika

Fresh herbs

  • Fresh parsley Fresh parsley (chopped, for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix Italian seasoning, smoked paprika, salt, black pepper, and olive oil. Coat chicken with this mixture.
  • Toss halved potatoes with olive oil, garlic, Parmesan, salt, and pepper.
  • Spread potatoes on a baking sheet and place chicken on top. Bake for 30 minutes until cooked and golden.
  • Garnish with chopped parsley before serving.
