Ingredients

Dough

  • 1/2 cup butter (unsalted and room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup all-purpose flour
  • 1/2 cup caramel baking bits
  • 1/2 cup pecans (diced)
  • 1/2 cup caramel baking bits
  • 1 tablespoon heavy cream
  • 1 teaspoon coarse salt

Instructions 

  • Spray a 7-inch round baking pan with spray oil.
  • Mix butter, sugars, egg, and vanilla until light and fluffy.
  • Stir in baking soda, salt, and flour.
  • Fold in pecans and caramel bits.
  • Pour batter into prepared pan and bake at 350°F (180°C) for 10-12 minutes.
  • Microwave caramel bits with heavy cream until smooth, then drizzle over the cookie and sprinkle with coarse salt.

For best results, serve warm or at room temperature.
