Delight in these chewy, spiced gluten-free cookies with a rich molasses flavor and a crispy coating.

Ingredients

Dry ingredients

  • 1 cup gluten-free oat flour (or 1 1/4 cup gluten-free rolled oats)
  • 0.25 cup arrowroot starch or tapioca flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon kosher salt
  • 1 teaspoon ground ginger
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.125 teaspoon ground cloves (optional)

Wet ingredients

  • 0.5 cup creamy, no-stir almond butter (see notes for nut-free option)
  • 0.25 cup coconut sugar or brown sugar
  • 0.25 cup cane sugar
  • 0.33 cup molasses (80 grams)
  • 1 egg egg (at room temperature)
  • 1 teaspoon pure vanilla extract
  • 0.33 cup sugar or raw sugar for coating

Instructions 

  • Preheat oven to 350°F (176°C) and line a baking sheet with parchment.
  • Mix dry ingredients in a bowl; combine wet ingredients in another. Combine both until smooth.
  • Chill dough for at least 1 hour. Scoop 1 tbsp, roll into balls, coat in sugar, and place on sheet.
  • Bake for 9-11 minutes for chewy or 12 minutes for crisp cookies. Cool on sheet 5-10 minutes.

Notes

Chilling the dough longer results in crispier cookies.
