Ingredients

Wet ingredients

  • 1/3 cup canola oil
  • 1 large egg (at room temp)
  • 1/3 cup milk
  • 1/3 cup sour cream
  • 1/3 cup unsulphured molasses
  • 2 teaspoons vanilla

Dry ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder

Icing ingredients

  • 1 ½ cups powdered sugar
  • 1 tablespoon unsalted butter (melted)
  • 1/2 teaspoon vanilla
  • 2-3 tablespoons half and half (adjust as needed)
  • 1/2 teaspoon cinnamon

Instructions 

  • Preheat oven to 350°F and spray a loaf pan.
  • Mix wet ingredients: oil, milk, sour cream, egg, molasses, vanilla.
  • Combine dry ingredients: flour, sugar, spices, salt, baking soda, baking powder.
  • Mix dry into wet until just combined, pour into pan.
  • Bake for 38-42 minutes, cool slightly, then add icing on top.

Notes

For best results, ensure ingredients are at room temperature and do not overmix the batter.
