A flavorful baked chicken dish glazed with honey and balsamic vinegar, served with tender roasted potatoes.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/2 cup pure honey
  • 1/3 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil

Vegetables

  • 1 lb baby potatoes, halved

Herbs

  • 2 sprigs fresh thyme or rosemary
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C). Coat a baking dish with nonstick spray.
  • Pat chicken dry, season with salt and pepper. Mix honey, balsamic vinegar, garlic, and olive oil.
  • Arrange potatoes in dish, drizzle with olive oil, season with salt and pepper. Toss to coat.
  • Place chicken on potatoes, pour glaze over everything. Add herbs.
  • Bake for 25-30 minutes until chicken reaches 165°F (75°C). Rest 5 minutes before serving.

Notes

Use fresh herbs for best flavor and adjust seasoning as needed.
