Dough
1cupwarm water (105-115°F)
2 1/4teaspoonsactive dry yeast(one standard packet)
1teaspoongranulated sugar
3cupsall-purpose flour(plus more for dusting)
1teaspoonsalt
1/2cupunsalted butter, melted
4clovesgarlic, minced
2tablespoonsfresh parsley, finely chopped
1 1/2cupsshredded mozzarella cheese
Instructions
Combine warm water, sugar, and yeast; let sit until foamy (5-10 min).
Add flour and salt; knead until smooth. Let rise in oiled bowl for 1-1.5 hours.
Mix melted butter, garlic, and parsley. Punch down dough, divide into 30-35 balls, coat with garlic butter.
Arrange balls in pan, sprinkle with half the cheese, then top with remaining cheese. Let rise 30-45 min.
Preheat oven to 375°F (190°C). Bake for 30-35 min until golden and bubbly.
Cool for 5-10 min, then invert onto a plate and serve warm.
