A flavorful and healthy Greek-inspired chicken couscous bowl perfect for a quick lunch or dinner.

Ingredients

olive oil

  • 1 Tbs olive oil

Israeli couscous

  • 1.5 cups Israeli couscous

chicken stock

  • 1.5 cups chicken stock

salt

  • 1 tsp salt

boneless skinless chicken

  • 1.5 lbs boneless skinless chicken

Greek Chicken marinade

  • 1 recipe Greek Chicken marinade

tzatziki

  • 1 cup tzatziki

avocados

  • 2 units avocados

grape or cherry tomatoes, halved

  • 1 cup Tomato grape or cherry, halved

cucumber, sliced

  • 1 cup cucumber sliced

red onion, sliced

  • 0.5 cup red onion sliced

Kalamata Olives

  • 0.5 cup Kalamata Olives

lemon wedges

  • 4 units Lemon wedge

Instructions 

  • In a large skillet, add olive oil, and turn to medium heat.
  • When oil is hot, add couscous, and toast until golden brown. Add chicken stock, stir in salt, cover, and simmer for 10-15 minutes until liquid is absorbed.

Notes

Use fresh ingredients for best flavor and serve with lemon wedges for added zest.
