Ingredients

Protein

  • 1 lb Mediterranean Grilled Chicken sliced

Vegetables

  • 1 cup cucumber chopped
  • 1 cup cherry tomatoes halved
  • 3/4 cup kalamata olives pitted and chopped
  • 2 cups romaine lettuce packed, washed, and chopped

Dairy & Sauces

  • 1/4 cup tzatziki

Bread & Wraps

  • 4 large flour tortillas

Oils & Condiments

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions 

  • Grill the chicken, let rest, then slice and set aside.
  • Whisk olive oil, lemon juice, vinegar, salt, pepper, and oregano to make the vinaigrette.
  • Mix lettuce, tomatoes, cucumbers, and olives; add vinaigrette and tzatziki, then toss gently.
  • Warm tortillas in microwave for 15 seconds to soften.
  • Place salad and sliced chicken in each tortilla, fold sides, roll tightly, and slice if desired.

Notes

Use leftover rotisserie chicken if preferred for quicker preparation.
