Enjoy tender, flavorful chicken thighs marinated in lemon and herbs, then baked to perfection for a delicious Greek-inspired meal.

Ingredients

  • 8 pieces bone-in chicken thighs
  • cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 cloves garlic (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions 

  • Mix oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper to make marinade.
  • Marinate chicken thighs in the mixture for 1-2 hours in the fridge.
  • Preheat oven to 350°F (180°C). Place chicken in a baking dish and pour remaining marinade on top.
  • Bake for 40-45 minutes until fully cooked and register 175°F (80°C). Optionally, baste and broil for crispy skin.

Notes

For extra flavor, garnish with lemon slices before serving.
