Enjoy tender, flavorful chicken thighs marinated in lemon and herbs, then baked to perfection for a delicious Greek-inspired meal.

Instructions
Mix oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper to make marinade.
Marinate chicken thighs in the mixture for 1-2 hours in the fridge.
Preheat oven to 350°F (180°C). Place chicken in a baking dish and pour remaining marinade on top.
Bake for 40-45 minutes until fully cooked and register 175°F (80°C). Optionally, baste and broil for crispy skin.
Notes
For extra flavor, garnish with lemon slices before serving.
