A flavorful and juicy chicken dish infused with lemon and herbs, perfect for a quick dinner or entertaining guests.

Ingredients

Meat

  • 8 pieces bone-in chicken thighs
  • cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 cloves garlic (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions 

  • Mix oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper to make marinade.
  • Marinate chicken thighs for 1-2 hours in the fridge.
  • Preheat oven to 350°F (180°C). Place chicken in a baking dish and pour marinade over.
  • Bake for 40-45 minutes until cooked through and skin is crispy.

Notes

For extra crispy skin, broil for the last 2-3 minutes.
