A flavorful Greek-inspired beef and rice skillet dish with fresh vegetables and herbs, perfect for a hearty meal.

Ingredients

Meat

  • 1 pound lean ground beef
  • 0.25 cup olive oil
  • 1 each onion, finely chopped
  • 5-6 cloves garlic, chopped
  • to taste Salt
  • 0.25 teaspoon black pepper
  • a pinch crushed red pepper flakes
  • 7 ounces diced tomatoes
  • 1 each bell pepper, diced
  • 2 tablespoons finely chopped fresh parsley
  • 1.5 cups Basmati rice

Instructions 

  • Rinse rice until water runs clear, then soak for 15 minutes.
  • Cook onion in olive oil until soft, then add garlic and cook 3-4 minutes.
  • Add ground beef, cook 3 minutes, then season with salt, pepper, and red pepper flakes. Add tomatoes and simmer 10 minutes.
  • Add diced bell peppers and cook 5 minutes. Stir in parsley.
  • Drain rice, add to skillet with 1.5 cups water and salt. Bring to boil, cover, and simmer 15 minutes. Fluff and serve.

Notes

Adjust seasoning to taste and serve with feta, tzatziki, and salad for a complete meal.
