A flavorful Greek-inspired beef and rice skillet dish with fresh vegetables and herbs, perfect for a hearty meal.
Ingredients
Meat

lean ground beef

olive oil

onion, finely chopped

garlic, chopped
to taste

black pepper

crushed red pepper flakes

diced tomatoes

bell pepper, diced

finely chopped fresh parsley

Basmati rice
Instructions
Rinse rice until water runs clear, then soak for 15 minutes.
Cook onion in olive oil until soft, then add garlic and cook 3-4 minutes.
Add ground beef, cook 3 minutes, then season with salt, pepper, and red pepper flakes. Add tomatoes and simmer 10 minutes.
Add diced bell peppers and cook 5 minutes. Stir in parsley.
Drain rice, add to skillet with 1.5 cups water and salt. Bring to boil, cover, and simmer 15 minutes. Fluff and serve.
Notes
Adjust seasoning to taste and serve with feta, tzatziki, and salad for a complete meal.
