plain Greek yogurt

Coating

granulated sugar

ground cinnamon

melted butter
Instructions
Blend Greek yogurt, eggs, flour, milk, melted butter, honey, cinnamon, vanilla, baking powder, and salt until smooth.
Let batter rest for 20-30 minutes. Prepare filling and cinnamon sugar coating.
Heat a non-stick pan over medium heat, pour ¼ cup batter, cook until edges are dry and bubbles form, then flip and cook until golden.
Fill crepes with cinnamon yogurt, roll up, then brush with melted butter and sprinkle with cinnamon sugar.
Serve immediately with fresh berries. Store leftovers in layers separated by parchment paper.
Notes
For best results, serve crepes warm and fill immediately.
