Delight in these soft, cinnamon-spiced crepes filled with creamy Greek yogurt and topped with fresh berries for a perfect breakfast or dessert.

Ingredients

Batter

  • 1 cup plain Greek yogurt
  • 3 large eggs
  • ¾ cup all-purpose flour
  • ½ cup whole milk
  • 2 tablespoons melted butter, plus more for cooking
  • 1 tablespoon honey or maple syrup
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Pinch salt

Filling

  • 1 cup Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract

Coating

  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter

Instructions 

  • Blend Greek yogurt, eggs, flour, milk, melted butter, honey, cinnamon, vanilla, baking powder, and salt until smooth.
  • Let batter rest for 20-30 minutes. Prepare filling and cinnamon sugar coating.
  • Heat a non-stick pan over medium heat, pour ¼ cup batter, cook until edges are dry and bubbles form, then flip and cook until golden.
  • Fill crepes with cinnamon yogurt, roll up, then brush with melted butter and sprinkle with cinnamon sugar.
  • Serve immediately with fresh berries. Store leftovers in layers separated by parchment paper.

Notes

For best results, serve crepes warm and fill immediately.
