A delicious fusion of Mexican flavors and comfort food, this grilled cheese burrito is perfect for a quick, satisfying meal.

Ingredients

Meat

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)

Rice

  • 1 cup cooked white rice

Dairy

  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • as needed butter or oil for grilling

Instructions 

  • Cook the ground beef with taco seasoning until browned, then simmer with water for 5 mins.
  • Warm tortillas on a skillet or microwave for flexibility.
  • Layer rice, beef, cheeses, nacho sauce, chipotle sauce, and sour cream on a tortilla, then roll up.
  • Heat a skillet with butter/oil, place the burrito seam-side down, sprinkle with shredded cheese, and grill until crispy and cheese melts. Flip and repeat.

Notes

For extra flavor, add chopped cilantro or jalapeƱos before grilling.
