A vibrant and satisfying bowl combining marinated grilled chicken, rice, beans, and fresh toppings for a delicious meal.

Ingredients

Protein

  • 3–4 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 fresh lime juice of 1 fresh lime
  • 2 tsp cumin
  • Salt and pepper to taste Salt and pepper
  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, rinsed
  • 1 cup diced bell peppers (mixed colors)
  • 1 avocado diced avocado
  • ¼ cup chopped fresh cilantro
  • ½ cup salsa
  • 1 cup shredded cheese (sharp cheddar or pepper jack)

Instructions 

  • Whisk olive oil, lime juice, cumin, salt, and pepper. Marinate chicken for at least 30 minutes.
  • Grill chicken over medium-high heat for 6–7 minutes per side until cooked through. Rest and slice.
  • Cook rice according to package instructions. Fluff and keep warm.
  • Warm black beans and diced peppers in a saucepan for 5 minutes.
  • Assemble bowls with rice, bean mixture, sliced chicken, cheese, avocado, cilantro, and salsa.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
