A flavorful and healthy dish featuring marinated grilled chicken served with crispy sweet potato fries and fresh herbs.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 2 large sweet potatoes (about 1 lb), peeled and cut into fries
  • to taste Salt and pepper
  • 1 tsp smoked paprika

Instructions 

  • Preheat oven to 425°F (220°C).
  • Mix garlic, herbs, lemon juice, olive oil, salt, pepper, and paprika to make marinade. Coat chicken and refrigerate 30 mins.
  • Toss sweet potato fries with olive oil, salt, and pepper; bake for 25-30 mins until crispy.
  • Grill chicken over medium-high heat for 6-7 mins per side until cooked through.
  • Slice chicken, serve over greens with fries, drizzle remaining marinade.
