A flavorful and healthy grilled chicken paired with a fresh quinoa salad, perfect for a light lunch or dinner.

Ingredients

Protein

  • 4 pieces boneless chicken breasts
  • 2 lemons lemons (juice and zest) (Use fresh lemons for best flavor)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste none Salt and pepper

Grains

  • 1 cup quinoa (Rinse before cooking)
  • 2 cups water or vegetable broth (Choose based on preference)

Vegetables

  • 1 piece cucumber, diced
  • 1 piece tomato, diced
  • 1/4 cup fresh parsley, chopped (For garnish)

Instructions 

  • Marinate chicken with lemon juice, zest, olive oil, garlic, thyme, oregano, salt, and pepper. Grill until cooked through, about 6-8 minutes per side.
  • Cook quinoa in water or broth until fluffy, about 15 minutes. Let cool slightly.
  • Mix cooked quinoa with diced cucumber, tomato, and chopped parsley. Season as desired.
  • Serve grilled chicken sliced over the quinoa salad. Garnish with additional parsley if desired.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before grilling.
