Instructions
Marinate chicken with lemon juice, zest, olive oil, garlic, thyme, oregano, salt, and pepper. Grill until cooked through, about 6-8 minutes per side.
Cook quinoa in water or broth until fluffy, about 15 minutes. Let cool slightly.
Mix cooked quinoa with diced cucumber, tomato, and chopped parsley. Season as desired.
Serve grilled chicken sliced over the quinoa salad. Garnish with additional parsley if desired.
Notes
For extra flavor, marinate the chicken for at least 30 minutes before grilling.
