shredded cheddar cheese, divided

sour cream

beef broth

Instructions
Preheat oven to 375°F (190°C). Sauté onion and garlic in olive oil until fragrant.
Add ground beef, season with salt, pepper, thyme, and paprika; cook until browned.
Pour in beef broth, simmer briefly, then remove from heat.
Mix potatoes with beef mixture, fold in sour cream and half of cheese.
Transfer to baking dish, top with remaining cheese, cover, and bake for 30 minutes. Uncover and bake 10-15 minutes more.
Notes
Let the casserole rest for 10 minutes before serving for best texture.
