A hearty and comforting casserole combining seasoned ground beef, tender potatoes, and melted cheese, perfect for a family dinner.

Ingredients

Meat and Potatoes

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions 

  • Preheat oven to 375°F (190°C). Sauté onion and garlic in olive oil until fragrant.
  • Add ground beef, season with salt, pepper, thyme, and paprika; cook until browned.
  • Pour in beef broth, simmer briefly, then remove from heat.
  • Mix potatoes with beef mixture, fold in sour cream and half of cheese.
  • Transfer to baking dish, top with remaining cheese, cover, and bake for 30 minutes. Uncover and bake 10-15 minutes more.

Notes

Let the casserole rest for 10 minutes before serving for best texture.
