A quick and flavorful skillet dish combining lean ground beef with fresh zucchini and herbs, perfect for a healthy weeknight dinner.

Ingredients

Meat and Vegetables

  • 1 pound lean ground beef
  • 2 medium zucchinis (diced into bite-sized pieces)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons tomato paste (or 1 cup diced tomatoes)
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper
  • 1 teaspoon dried oregano
  • 0.25 teaspoon chili flakes (adjust to preference)
  • 2 tablespoons chopped fresh parsley or basil
  • shredded mozzarella or Parmesan cheese for serving

Instructions 

  • Heat olive oil in a skillet, cook ground beef until browned, then drain excess fat.
  • Add onion and garlic, cook until fragrant, about 3-4 minutes.
  • Stir in zucchini and cook until tender, about 5 minutes.
  • Add tomato paste or diced tomatoes, season with salt, pepper, oregano, chili flakes, simmer for 5 minutes.
  • Remove from heat, stir in herbs, serve hot with cheese or parsley.

Notes

Feel free to top with shredded cheese or additional herbs for extra flavor.
