A quick and hearty breakfast hash combining seasoned ground beef, crispy potatoes, and eggs, perfect for busy mornings.

Vegetables

Yukon Gold potatoes, diced into 1/2-inch cubes

yellow onion, chopped

bell pepper, diced (any color)

garlic, minced
Spices & Oils

smoked paprika
1/2

fresh thyme leaves (or 1/4 tsp dried thyme)

Kosher salt

Black pepper

olive oil or avocado oil, divided
Eggs

Instructions
Dice potatoes, chop onion and bell pepper, mince garlic, and crack eggs into cups.
Cook ground beef in 1 tbsp oil until browned, then set aside.
Cook potatoes in 1 tbsp oil with salt and pepper until crispy and tender, then add veggies and spices, sauté until softened.
Mix beef back into the hash, add cheese if using, make wells, and pour eggs into each. Cover and cook until eggs are done to preference.
Garnish with herbs, serve hot with optional hot sauce or salsa.
Notes
For extra flavor, add a splash of hot sauce or sprinkle fresh herbs before serving.
