Ingredients

  • 1.5 pounds lean ground beef
  • 0.5 cup diced onion
  • 2 cloves garlic, minced
  • 3 tablespoons taco seasoning
  • 0.5 cup water
  • 0.5 cup instant white rice
  • 0.5 cup chicken or beef broth
  • 19 ounces red enchilada sauce
  • 15 ounces black beans, drained and rinsed
  • 15 ounces pinto beans, drained and rinsed
  • 6 small flour tortillas, sliced into 1-inch strips
  • 1 cup shredded cheddar jack cheese

Instructions 

  • Brown the ground beef in a large skillet over medium heat for about 5 minutes.
  • Add diced onion and minced garlic, cook until softened, about 2 minutes.
  • Stir in taco seasoning and water, simmer for 1-2 minutes.
  • Mix in rice, broth, enchilada sauce, and beans; simmer covered for 5 minutes until rice is tender.
  • Stir in tortilla slices, sprinkle cheese on top, cover until cheese melts, about 2-3 minutes.
  • Top with sour cream, guacamole, and cilantro before serving.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime before serving.
