Instructions
Brown the ground beef in a large skillet over medium heat for about 5 minutes.
Add diced onion and minced garlic, cook until softened, about 2 minutes.
Stir in taco seasoning and water, simmer for 1-2 minutes.
Mix in rice, broth, enchilada sauce, and beans; simmer covered for 5 minutes until rice is tender.
Stir in tortilla slices, sprinkle cheese on top, cover until cheese melts, about 2-3 minutes.
Top with sour cream, guacamole, and cilantro before serving.
Notes
For extra flavor, add chopped cilantro or a squeeze of lime before serving.
