2mediumsweet potatoes, peeled and diced
1slicedavocado
1cupcottage cheese
1dicedyellow onion
2tbspolive oil
1packettaco seasoning (or 2 tbsp)
2tbsphot honey
½tsppaprika
½tspgarlic powder
¼tspground cinnamon

Instructions
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway.
Heat 1 tbsp olive oil in a skillet over medium heat. Sauté diced onion until soft, about 3–4 minutes.
Add ground beef to the skillet. Cook for 6–8 minutes, breaking apart. Stir in taco seasoning, salt, and pepper. Cook until browned.
Assemble bowls: sweet potatoes on bottom, then ground beef, avocado slices, and cottage cheese. Drizzle hot honey over each bowl.
Serve immediately and enjoy while warm.
