A flavorful and easy-to-make bowl combining spicy, sweet ground beef with rice and fresh vegetables for a satisfying dinner.

Ingredients

Meat

  • 1.25 pounds lean ground beef (85/15 or 90/10)
  • to taste hot honey
  • 1 medium yellow or white onion, minced
  • 2-3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons low-sodium soy sauce (or tamari)
  • 1 tablespoon non-alcoholic rice cooking beverage (or substitute)

Base

  • 4 cups white rice (jasmine or basmati) or other base

Vegetables

  • as desired steamed broccoli florets, sautéed bell peppers, or roasted asparagus

Garnishes

  • to taste sliced scallions, toasted sesame seeds, fresh cilantro

Instructions 

  • Cook rice according to package instructions.
  • Brown the ground beef in a skillet over medium-high heat until fully cooked, then drain excess fat.
  • Add minced onion to the beef and cook until softened, then stir in garlic and ginger, cooking for 1 minute.
  • Whisk hot honey, soy sauce, and rice beverage in a small bowl to make the sauce.
  • Pour sauce over beef mixture, simmer for 2-3 minutes until thickened, then serve over rice with vegetables and garnishes.

Notes

Adjust hot honey to taste for spiciness and sweetness.
