A flavorful and easy-to-make taco rice bowl combining seasoned beef, fresh toppings, and fluffy rice for a satisfying meal.

Ingredients

Meat and Rice

  • 1 lb ground beef 85% lean (preferably)
  • 3 cups cooked white or brown rice
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet or 2 tablespoons taco seasoning mix
  • 0.5 cup tomato sauce or salsa
  • 1 cup corn kernels, fresh, canned, or frozen
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup cherry tomatoes, halved
  • 1 avocado sliced
  • 0.25 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions 

  • Cook the rice according to package instructions, then fluff and keep warm.
  • In a large skillet, heat olive oil over medium heat. Sauté onion for 3-4 minutes until translucent, then add garlic and cook for 30 seconds.
  • Add ground beef to the skillet, cook for 5-7 minutes until browned, then drain excess fat. Season with salt and pepper.
  • Sprinkle taco seasoning over beef, stir to coat, then pour in tomato sauce. Simmer for 5 minutes until thickened.
  • Prepare toppings: warm corn and black beans, slice avocado, halve cherry tomatoes, and chop cilantro.
  • Assemble bowls: start with rice, add beef mixture, then top with corn, black beans, tomatoes, avocado, cheese, and cilantro. Squeeze lime over before serving.

Notes

For extra flavor, add hot sauce or salsa to taste.
