Ingredients

Meat

  • 1 pound lean ground beef

Oil

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium zucchini, sliced into half-moons
  • 1 medium carrot, thinly sliced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • to taste Salt and black pepper
  • 1 cup shredded cheddar or mozzarella cheese (optional)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions 

  • Cook ground beef in 1 tablespoon olive oil until browned, then drain excess grease.
  • Sauté onion and garlic in remaining oil until soft.
  • Add bell peppers, zucchini, carrots, and corn; cook until vegetables soften slightly.
  • Mix in tomatoes and seasonings; simmer for 5–7 minutes.
  • Optional: sprinkle cheese on top, cover, and cook until melted. Garnish with parsley and serve.
