2cupszucchini (cubed)
1cupbroccoli (florets)
3/4cupred bell pepper (chopped)
1/2cupred onion (chopped)
3clovesgarlic (minced)
2tbsptomato paste
2tbspsoy sauce (or coconut aminos)

Instructions
Heat oil in a large skillet, cook beef for 8-10 minutes until browned, then add onion and garlic, cooking until beef is no longer pink.
While beef cooks, chop the vegetables to save time.
Add zucchini, broccoli, and bell pepper to the skillet, stir in soy sauce and tomato paste, then simmer covered for 6-8 minutes until vegetables are tender and sauce thickens.
Garnish with chopped fresh parsley and serve hot.
