A quick and healthy skillet dish combining seasoned ground beef with colorful vegetables for a satisfying meal.
Ingredients
Meat

grass-fed ground beef

tbsp
olive oil
Vegetables

cups
zucchini (cubed)

broccoli (florets)

cup
red bell pepper (chopped)

red onion (chopped)

cloves
garlic (minced)

tomato paste

soy sauce (or coconut aminos)
Seasonings
to taste
salt and pepper
Garnish

fresh parsley
Instructions
Heat oil in a large skillet, cook ground beef for 8-10 minutes until browned, then add onion and garlic, cooking until beef is no longer pink.
While beef cooks, chop the vegetables. Add zucchini, broccoli, and bell pepper to the skillet, stirring well.
Season with salt, pepper, add soy sauce and tomato paste, then cover and simmer for 6-8 minutes until vegetables are tender and sauce thickens.
Garnish with chopped fresh parsley and serve hot.
