A quick and healthy skillet dish combining seasoned ground beef with colorful vegetables for a satisfying meal.

Ingredients

Meat

  • 1 lb grass-fed ground beef
  • 1 tbsp olive oil

Vegetables

  • 2 cups zucchini (cubed)
  • 1 cup broccoli (florets)
  • 3/4 cup red bell pepper (chopped)
  • 1/2 cup red onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce (or coconut aminos)

Seasonings

  • to taste salt and pepper

Garnish

  • 1 bunch fresh parsley

Instructions 

  • Heat oil in a large skillet, cook ground beef for 8-10 minutes until browned, then add onion and garlic, cooking until beef is no longer pink.
  • While beef cooks, chop the vegetables. Add zucchini, broccoli, and bell pepper to the skillet, stirring well.
  • Season with salt, pepper, add soy sauce and tomato paste, then cover and simmer for 6-8 minutes until vegetables are tender and sauce thickens.
  • Garnish with chopped fresh parsley and serve hot.

Notes

Feel free to customize with your favorite vegetables or adjust seasonings to taste.
