A quick and nutritious one-pan meal combining ground beef, zucchini, and sweet potatoes for a satisfying dinner.

zucchinis, sliced

sweet potato, peeled and diced

Instructions
Cook ground beef in a skillet until browned, then set aside.
Sauté onion and garlic in the same skillet until soft.
Add sweet potato, cover, and cook 5-7 minutes until soft.
Stir in zucchini, cook 3 minutes, then return beef and season with spices.
Add spinach, cook until wilted, then sprinkle cheese and garnish with parsley.
Notes
Feel free to add red pepper flakes for extra heat or cheese for creaminess.
