A flavorful and healthy stuffed pepper recipe combining lean ground turkey, quinoa, and melted cheese, perfect for a satisfying meal.

Ingredients

Vegetables

  • 4 large bell peppers (large bell peppers, sliced lengthwise)
  • 1 lb lean ground turkey
  • 1 cup uncooked quinoa (rinsed)
  • 2 cups low-sodium chicken broth (or water for cooking quinoa)
  • 1 small onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 cup canned tomato sauce (or crushed tomatoes)
  • 1 cup shredded mozzarella (divided)
  • 1/2 cup grated Parmesan (optional but amazing)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4–1/2 teaspoon red pepper flakes (optional heat)
  • to taste Salt and black pepper
  • for garnish Fresh parsley or cilantro (chopped)
  • for serving Fresh lemon or lime wedges (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Slice peppers, remove seeds, and bake for 12–15 minutes.
  • Cook quinoa in chicken broth until tender, then fluff and set aside.
  • Cook onion and garlic in olive oil, add ground turkey with seasonings, cook until browned.
  • Stir in tomato sauce, simmer briefly, then mix in cooked quinoa, half the cheese, and Parmesan.
  • Stuff peppers with filling, top with remaining cheese, bake for 15–18 minutes, then garnish and serve.

Notes

For extra flavor, broil the stuffed peppers for 1–2 minutes at the end for a golden top.
