Instructions
Preheat oven to 400°F (200°C). Slice peppers, remove seeds, and bake for 12–15 minutes.
Cook quinoa in chicken broth until tender, then fluff and set aside.
Cook onion and garlic in olive oil, add ground turkey with seasonings, cook until browned.
Stir in tomato sauce, simmer briefly, then mix in cooked quinoa, half the cheese, and Parmesan.
Stuff peppers with filling, top with remaining cheese, bake for 15–18 minutes, then garnish and serve.
Notes
For extra flavor, broil the stuffed peppers for 1–2 minutes at the end for a golden top.
