A moist and flavorful spice bread packed with pumpkin, apple, carrot, and warm spices, perfect for cozy mornings or snacks.

Ingredients

Dry ingredients

  • 1 3/4 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (*)
  • 1/4 teaspoon ground cloves (*)
  • 1/4 teaspoon ground ginger (*)

Wet ingredients

  • 1/2 cup vegetable oil (canola or melted coconut oil)
  • 2 large eggs (at room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (light or dark packed)
  • 1/2 cup pumpkin puree (canned or fresh)
  • 1 heaping cup shredded apple (peeled and shredded)
  • 3/4 cup shredded carrot (peeled and shredded)
  • 2 tablespoons milk
  • 1 cup chopped walnuts (*)

Instructions 

  • Preheat oven to 350°F (177°C). Grease a 9×5-inch loaf pan.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl. Combine and fold in walnuts.
  • Pour batter into pan and bake for 55–65 minutes until a toothpick comes out clean. Cover with foil halfway if needed.
  • Cool completely before removing from pan. Store at room temperature for 3-4 days or refrigerate up to 10 days.

Notes

Loosely cover the bread with foil during baking to prevent heavy browning.
