Enjoy these wholesome apple muffins made with oats, apples, and natural sweeteners for a nutritious treat.

Ingredients

Dry Ingredients

  • 3 cups old-fashioned oats
  • 1 tablespoon pumpkin pie spice
  • 1.5 teaspoons baking soda
  • 0.75 teaspoon fine sea salt

Wet Ingredients

  • 1 medium apple (finely diced)
  • 2 eggs eggs
  • 0.67 cup unsweetened almond milk
  • 0.75 cup unsweetened applesauce
  • 0.5 cup maple syrup
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract

Optional Topping

  • to taste turbinado sugar for sprinkling

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin pan with liners or lightly grease.
  • Blend oats into a fine flour, then mix with spices, baking soda, and salt. Toss diced apple in the mixture.
  • Whisk eggs, milk, applesauce, maple syrup, coconut oil, and vanilla. Fold in dry ingredients until just combined.
  • Divide batter into muffin cups, sprinkle with turbinado sugar if desired, and bake for 15-18 minutes.
  • Cool slightly before serving. Store leftovers in a sealed container for up to 3 days or freeze for longer storage.

Notes

For extra flavor, sprinkle turbinado sugar on top before baking.
