Instructions
Preheat oven to 375°F (190°C). Line a muffin pan with liners or lightly grease.
Blend oats into a fine flour, then mix with spices, baking soda, and salt. Toss diced apple in the mixture.
Whisk eggs, milk, applesauce, maple syrup, coconut oil, and vanilla. Fold in dry ingredients until just combined.
Divide batter into muffin cups, sprinkle with turbinado sugar if desired, and bake for 15-18 minutes.
Cool slightly before serving. Store leftovers in a sealed container for up to 3 days or freeze for longer storage.
Notes
For extra flavor, sprinkle turbinado sugar on top before baking.
