Ingredients

  • 2 large ripe avocados
  • 2 cups cooked chicken breast, diced ((about 2 medium breasts))
  • ¼ cup red onion, finely diced
  • ¼ cup celery, finely diced
  • ¼ cup red bell pepper, diced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons lime juice
  • ¼ teaspoon garlic powder
  • to taste Salt and black pepper
  • ¼ cup Greek yogurt (optional) (for added creaminess)

Instructions 

  • Cut avocados in half, remove pits, and scoop into a bowl.
  • Add diced chicken, red onion, celery, red bell pepper, cilantro, lime juice, garlic powder, salt, and pepper to the bowl.
  • Mix gently until well combined. Optional: stir in Greek yogurt for creaminess.
  • Serve immediately or refrigerate for 30 minutes to enhance flavors.

Notes

For extra flavor, add a dash of hot sauce or your favorite herbs.
