Ingredients

  • 2 cups cooked brown rice
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup broccoli florets
  • 1 cup diced carrots
  • 1 cup low-sodium chicken broth
  • 1 cup Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 1 cup shredded low-fat cheese (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch dish.
  • Mix rice, chicken, broccoli, and carrots in a bowl.
  • Whisk chicken broth, yogurt, garlic, onion, thyme, salt, and pepper; pour over mixture.
  • Transfer to dish, sprinkle cheese if using, cover, and bake 25 mins. Uncover and bake 15–20 mins.
  • Let rest 5 mins before serving.

Notes

For extra flavor, add herbs or spices as desired.
