A delicious low-carb casserole combining tender chicken, cauliflower rice, and cheesy goodness for a healthy meal.
Ingredients

shredded chicken (rotisserie or cooked chicken breast)
Vegetables

cauliflower rice (store-bought or homemade)

cream cheese (softened) (or Greek yogurt for a lighter version)

shredded cheddar cheese (divided, or use a mix of cheeses like mozzarella and parmesan)

chopped spinach, broccoli florets, or sliced mushrooms
Instructions
Sauté cauliflower rice with olive oil until tender, then add garlic powder, onion powder, paprika, salt, and pepper.
Mix in cooked chicken and chopped vegetables, then spread evenly in a baking dish.
Spread softened cream cheese over the mixture and top with half of the shredded cheese.
Bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.
Sprinkle remaining cheese on top and bake for an additional 5 minutes.
Notes
For a lighter version, substitute Greek yogurt for cream cheese.
