Ingredients

Dried ingredients

  • 1 cup instant oats
  • ¾ cup whole wheat or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 2 tbsp nonfat milk, room temperature
  • 1 tsp vanilla extract
  • ½ cup pure maple syrup, room temperature
  • 2 ½ tbsp miniature chocolate chips, divided
  • 2 tbsp shredded unsweetened coconut
  • 2 tbsp finely diced pecans

Instructions 

  • Preheat oven to 325°F (160°C) and line a baking sheet with parchment.
  • Mix oats, flour, baking powder, cinnamon, and salt in a bowl.
  • Whisk together coconut oil, egg, milk, vanilla, and maple syrup; combine with dry ingredients.
  • Chill dough for 30 minutes, then scoop onto baking sheet and flatten slightly.
  • Press remaining chocolate chips on top and bake for 10-13 minutes. Cool before serving.

Notes

Chilling the dough helps prevent spreading during baking.
