Enjoy these wholesome, easy-to-make oatmeal cookies that are perfect for a healthy snack or dessert.

Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 0.5 cup oat flour ((or white whole wheat flour))
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 0.125 teaspoon salt

Wet ingredients

  • 3 tablespoons melted coconut oil ((or melted butter))
  • 2 tablespoons coconut sugar ((or brown sugar))
  • 2 tablespoons pure maple syrup ((or honey))
  • 1 flax egg flax egg
  • 0.5 teaspoon pure vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix dry ingredients in a bowl. Whisk wet ingredients in another bowl.
  • Combine wet and dry mixtures until thick and sticky.
  • Scoop dough onto baking sheet and flatten into discs with a fork.
  • Bake for 8-12 minutes, then cool on a rack. Enjoy!

Store in an airtight container for up to 3 days.
