Enjoy these wholesome pumpkin donuts that are perfect for a nutritious snack or breakfast treat.

Ingredients

Dry ingredients

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1 tsp. ground cinnamon

Wet ingredients

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup erythritol (stevia or natural sweetener)
  • 1/4 cup light vegetable oil
  • 1/3 cup milk (dairy or non-dairy)
  • 1/4 cup maple syrup
  • 3 Tbsp. erythritol
  • 1 Tbsp. butter
  • 1/4 cup milk (more or less, depends on desired thickness)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix dry ingredients in a bowl.
  • Combine wet ingredients separately, then mix into dry ingredients.
  • Fill donut molds and bake for 15 minutes.
  • Let cool before removing from molds.

Notes

Use a silicone mold for easy removal and even baking.
