Ingredients

Banana

  • 0.5 cup mashed very ripe banana
  • 1 large egg
  • 2 tbsp melted butter or coconut oil
  • 0.25 cup plain Greek yogurt
  • 0.75 cup white whole wheat flour
  • 0.5 tsp vanilla
  • 0.5 tsp aluminum free baking powder
  • 0.25 tsp baking soda
  • pinch salt salt (optional)
  • 0.5 cup chopped strawberries

Instructions 

  • Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners.
  • Mash the banana until smooth in a large bowl.
  • Whisk in the egg, melted butter, Greek yogurt, and vanilla.
  • Stir in the flour, baking powder, baking soda, and salt until just combined, then fold in strawberries.
  • Scoop about 1 tablespoon of batter into each muffin cup and bake for 11-15 minutes until a toothpick comes out clean.
  • Cool muffins in the pan for 5-10 minutes before transferring to a wire rack.

Notes

For extra flavor, add a sprinkle of cinnamon or a handful of chopped nuts.
