Instructions
Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners.
Mash the banana until smooth in a large bowl.
Whisk in the egg, melted butter, Greek yogurt, and vanilla.
Stir in the flour, baking powder, baking soda, and salt until just combined, then fold in strawberries.
Scoop about 1 tablespoon of batter into each muffin cup and bake for 11-15 minutes until a toothpick comes out clean.
Cool muffins in the pan for 5-10 minutes before transferring to a wire rack.
Notes
For extra flavor, add a sprinkle of cinnamon or a handful of chopped nuts.
