Delicious and wholesome vegan brownies made with ripe bananas and cocoa, perfect for a healthy treat.
Ingredients
Dry ingredients

oat flour
(Use gluten-free if needed)
½
cup
natural cocoa powder
(Replace baking soda with baking powder if using Dutch-processed cocoa)

teaspoon
baking soda

teaspoon
cinnamon
(Reduce or omit if desired)
½
teaspoon
fine sea salt
Wet ingredients
1
cup
mashed overripe banana
(About 2 large bananas with dark spots)
¼
cup
maple syrup
¼
cup
coconut sugar
(Can substitute date or brown sugar)

tablespoon
brewed coffee
(Or non-dairy milk)

teaspoons
vanilla extract

runny almond butter
(Or any nut/seed butter)

chopped raw walnuts
Instructions
Preheat oven to 350°F (177°C) and line an 8x8 pan with parchment paper.
Mix dry ingredients in a bowl; mash bananas and combine with wet ingredients until smooth.
Combine wet and dry mixtures, then fold in walnuts.
Pour batter into pan and bake for 28-31 minutes until a toothpick comes out clean.
Let cool in pan for 20 minutes, then remove and cool completely before slicing into 16 squares.
Notes
Store in an airtight container for up to 3 days or freeze for longer storage.
