Hearty Beef Rice Burrito

A delicious and filling burrito combining seasoned beef, flavorful rice, and melted cheese wrapped in a warm tortilla.

Ingredients

Meat and Beans

  • 1 lb Ground Beef
  • 1 packet Taco Seasoning
  • 0.25 cup Water
  • 0.5 cup Refried Beans

Rice

  • 1 cup Long Grain White Rice
  • 2 cups Chicken Broth
  • 1 can 4 oz Diced Green Chiles
  • 1 tbsp Tomato Paste

Tortillas

  • 6 Large Flour Tortillas
  • 1.5 cups Cheddar or Monterey Jack Cheese

Instructions 

  • Cook rice: combine rice, broth, chiles, and tomato paste in a saucepan. Bring to boil, cover, and simmer 15-18 mins. Fluff and set aside.
  • Cook beef: brown ground beef in a skillet over medium-high heat, then add taco seasoning and water. Simmer 2 mins. Mix in refried beans.
  • Warm tortillas: microwave wrapped in damp paper towel for 30 seconds.
  • Assemble burritos: place 1/3 cup rice and beef mixture on each tortilla, sprinkle with cheese, fold sides, and roll tightly.
  • Cook burritos: in a skillet over medium heat, seam-side down, cook 2 mins per side until golden and crispy.

Notes

For extra flavor, add fresh cilantro or a squeeze of lime before serving.
