Ingredients

Base

  • 1 cup dry chickpeas (soaked overnight)
  • 1 cup white rice (rinsed)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • to taste Salt and pepper

Instructions 

  • Heat olive oil in a large pot over medium heat and sauté the chopped onion and minced garlic until translucent.
  • Add soaked chickpeas, rice, and vegetable broth to the pot. Bring to a boil.
  • Reduce heat and simmer for 25-30 minutes until chickpeas and rice are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh herbs if desired.
