A warm and nourishing soup combining chickpeas and spinach with fragrant spices, perfect for a comforting meal.

Ingredients

oil

  • 1 tablespoon olive oil

vegetables

  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)

spices

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon turmeric

liquids

  • 4 cups vegetable broth
  • 1 can chickpeas (drained and rinsed (15 oz / 425 g))

greens

  • 4 cups fresh spinach (about 120 g)
  • to taste salt and pepper
  • 1 lemon juice of lemon

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
  • Add ground cumin, smoked paprika, and turmeric; cook for 1 minute until fragrant.
  • Pour in vegetable broth and add chickpeas; bring to a boil, then simmer for 10 minutes.
  • Stir in spinach and cook until wilted, about 2-3 minutes. Squeeze in lemon juice and season with salt and pepper.

Notes

This soup is easy to customize with your favorite greens or spices. Serve with crusty bread for a complete meal.
