Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
Add ground cumin, smoked paprika, and turmeric; cook for 1 minute until fragrant.
Pour in vegetable broth and add chickpeas; bring to a boil, then simmer for 10 minutes.
Stir in spinach and cook until wilted, about 2-3 minutes. Squeeze in lemon juice and season with salt and pepper.
