Hearty Chickpea & Spinach Soup

A nourishing and flavorful soup combining chickpeas, spinach, and aromatic spices for a comforting meal.

Ingredients

Oil

  • 2 tablespoons extra-virgin olive oil

Vegetables

  • 1 medium yellow onion, finely diced
  • 1 large carrot, peeled and diced
  • 1 stalk celery, diced

Spices

  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon chili flakes (optional)

Canned Goods

  • 2 cans (15 oz each) chickpeas, drained and rinsed

Broth

  • 6 cups vegetable broth (preferably low-sodium)

Greens

  • 4 cups fresh spinach, roughly chopped

Finishings

  • 1 tablespoon fresh lemon juice
  • to taste Salt and freshly ground black pepper

Garnish

  • as needed Fresh parsley or cilantro leaves
  • optional a dollop of vegan yogurt or grated Parmesan

Instructions 

  • Heat olive oil in a large pot. Sauté onion, carrot, and celery until softened, about 8 minutes.
  • Add garlic and spices; cook for 1 minute until fragrant.
  • Stir in chickpeas, then pour in vegetable broth. Simmer uncovered for 20 minutes.
  • Blend about one-third of the soup until smooth, then return to pot. Add spinach and cook 5 minutes.
  • Finish with lemon juice, season with salt and pepper, then serve garnished with herbs and optional toppings.

Notes

Adjust seasoning to taste and serve with your favorite bread or side.
