chickpeas, drained and rinsed
Broth

vegetable broth (preferably low-sodium)
Greens

fresh spinach, roughly chopped

fresh lemon juice

Fresh parsley or cilantro leaves

Instructions
Heat olive oil in a large pot. Sauté onion, carrot, and celery until softened, about 8 minutes.
Add garlic and spices; cook for 1 minute until fragrant.
Stir in chickpeas, then pour in vegetable broth. Simmer uncovered for 20 minutes.
Blend about one-third of the soup until smooth, then return to pot. Add spinach and cook 5 minutes.
Finish with lemon juice, season with salt and pepper, then serve garnished with herbs and optional toppings.
Notes
Adjust seasoning to taste and serve with your favorite bread or side.
