8cupsvegetable broth
1tspground cumin
1tspsmoked paprika
0.5tspdried thyme
0.5tspdried rosemary

2cupsfresh spinach or kale (optional)

Instructions
Heat olive oil in a large pot, then cook diced onion, carrots, and celery for 5 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Stir in lentils, potatoes, tomatoes, broth, cumin, paprika, thyme, rosemary, salt, and pepper. Bring to a boil, then simmer for 30–40 minutes until tender.
In the last 5 minutes, stir in spinach or kale if using, until wilted. Taste and adjust seasoning. Serve hot, garnished with parsley.
