A comforting and nutritious soup combining lentils, potatoes, and vegetables, perfect for a wholesome meal.

Ingredients

Oil

  • 2 tbsp olive oil

Vegetables

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, diced
  • 2 stalks celery, diced

Lentils

  • 1.5 cups dried green or brown lentils, rinsed

Potatoes

  • 3 medium potatoes, diced

Canned Tomatoes

  • 1 can (14.5 oz) diced tomatoes

Broth

  • 8 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp dried rosemary

Seasoning

  • to taste Salt and black pepper

Greens

  • 2 cups fresh spinach or kale (optional)

Garnish

  • as needed Fresh parsley

Instructions 

  • Heat olive oil in a large pot, then cook diced onion, carrots, and celery for 5 minutes until softened.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in lentils, potatoes, tomatoes, broth, cumin, paprika, thyme, rosemary, salt, and pepper. Bring to a boil, then simmer for 30–40 minutes until tender.
  • In the last 5 minutes, stir in spinach or kale if using, until wilted. Taste and adjust seasoning. Serve hot, garnished with parsley.
